Chocolate Ganache Recipe

Recipe for Chocolate Ganache: Place 9 ounces chopped bittersweet chocolate into a medium bowl. Heat 1 cup of heavy cream in a small saucepan over medium heat. Bring just to a boil, watching very carefully. Pour over the chocolate and whisk until smooth. Stir in 1 tablespoon of rum if desired. Allow to cool slightly before pouring over a cake. We discuss 1) methods of making pasta, 2) best shapes of pasta for holding sauces or making soups, 3) pasta sauces including the use of organic products, 4) adding vegetables, spices and herbs into the cooked pasta itself, and 5) pesto and other pasta sauce recipes.

Nalini’s “Presto! Pesto!” Recipe

Nalini’s  “Presto! Presto! Recipe:  Loosely fill cuisinart w/fresh basil (not stems) leaves; add 3-4 cloves garlic, hand fulla nuts (toasted pine, roasted cashew), grated white Italian cheese and good quality olive oil. Puree and salt to taste. Use fresh parsley and other fresh herbs (such as lemon balm or a bit of rosemary or cilantro). Get creative! Great on pasta or grilled fish. When I make fresh tomato (&cream) soup, I add a walloping portion of pesto to it. Yum. Tune in for more info and more recipes.

Baking Pies, Tarts, Pastries and Breads

We discuss baking methods including: baking with dry and moist heat, baking in the oven and the ground, and a little bit about the history of baking.  Also, learn about the difference between sweet and savory pies, tarts and pastries, quick breads (coffee cakes, banana bread), and yeast breads (wheat, white, rye, sourdough).

 

A Simple Recipe for Good Quiche

Noreen Brown’s  “Simple Recipe for Good Quiche”:   Buy a pastry shell from the freezer section of the grocery store. Thaw and bake according to directions for a single crust pie. Grate 1/2 cup of parmesan cheese right into the cooled baked shell. Chop 1/4 cup of scallions and mix with 1 cup of cooked chicken breast, thawed frozen spinach and salt & pepper. Add to the cheese in the pastry crust. Beat 2 eggs with 1 cup of milk or cream, and add salt & pepper to taste and pour over the ingredients in the pastry crust.  Bake at 350 degrees for 30-35 minutes until set and puffy.  Tune in for more info and more recipes.

http://www.flickr.com/photos/37123035@N00/87644341Noreen Brown’s  “Arugula Salad with Citrus Vinaigrette”:  [Ingredients – 1/3 cup grapefruit juice, 1/3 cup of orange juice, 1/3 cup extra virgin olive oil, 6 ounces of arugula, rinsed, dried and torn, 1 pear, cored and sliced, and 1 red bell pepper thinly sliced, salt to taste]. Combine juices, olive oil and salt in a jar with a tight-fitting lid. Combine arugula, pear and red pepper in a bowl. Drizzle dressing over salad, and toss to coat. A group of Doctors are recommending birth control for all in health care coverage.  Since Viagra is covered, why not this?  What are the pros and cons?  

3) Sugar!

A new report indicates simple sugar may help speed heart attack recovery.   Any news that says sugar is good for you attracts our attention!  We segue into a great discussion of sugar substitutes such as agave,  stevia, aspartame and others.  Which one is best?

4) Celebs in the news

Britney Spears‘ bodyguard is suing her for being too smelly and messy.  Lindsay Lohan can’t afford psychological testing.  Tiger Wood fired his long-time caddy.  These celebs can’t stay out of the news!

5)  Drew Doughty, L.A. Kings Hockey Team

The big news in hockey right now is Drew Doughty has become an unrestricted free agent.  Will he re-sign with the Kings or go elsewhere?  We make predictions!

Its all about the art of the deal, as President Obama and Congressional leaders try to raise the debt limit so we don’t default as a nation, and more important, we make sure social security and medicare checks go out to our elderly next month.  A new poll shows Americans will blame the Republicans if we default on the debt.  Time to eat your peas, Tea Party-ers. 

2) Rupert Murdoch and Freedom of the Press

Rupert Murdoch owns major media in the U.S., Britain and other countries, including the Wall Street Journal and Fox News, and he’s not shy about trying to influence elections here or abroad.  People have been afraid to speak out for years, but the dam broke this week.  It turns out his minions have been hacking cell phones belonging to dead children, dead soldiers, and possibly even families of 9/11 victims here in New York.  The FBI is now investigating.  What are the implications for the U.S.?

3) Emmy Nominations 

Our favorites, “Mad Men” and “Boardwalk Empire” are nominated, as is “Dexter” and Betty White, Julianne Margulies and a host of reality shows.  Are yours?  If you had to choose, who would you vote for: John Hamm or Steven Buscemi? Betty White or Sophia Vergara?  How about Peter Dinklage or Chris Colfer? Lots of tough decisions this year!

 Tracy Morgan, John Galliano of the House of Dior, and a Southwest Airlines pilot ranted against gays, Jews and women, respectively, this week.  Are we being too politically correct about it?  Should these ranters face criminal charges, as John Galliano is as he undergoes a trial in France for his diatribe against a Jewish couple having tea near his apartment.

  1)  “Weiner-gate” – Should Rep. Anthony Weiner (D-NY) resign for texting photos of himself in flagrante delicto to various women? Could we, or should we, forgive such behavior?  And why do men think women are so interested in seeing their private parts?

2)  Newt Ginrich – The entire top staff for his Presidential campaign resigned today, breaking news

3) Abortion Billboard – A man paid for a billboard claiming that his ex-girlfriend killed their baby by having an abortion.  He claims Free Speech rights and she claims a Right to Privacy.  Who will prevail?

4) Be sure to check out the new Google Doodle that honors guitarist and inventer Les Paul.  You can pluck the strings, play a tune, and record it for playback.  So much fun!

 

5)  Men behaving badly:  A woman on Facebook learned that her husband wanted to take a contract out on her life and run away with a teenager.  Unfortunately for him, the teenager turned out to be his wife playing a role online.  Oops!
